Heritage Portfolio have a fantastic opportunity for an experienced Chef Manager to be based at one of Edinburgh’s most prestigious venues.We would love you to join our awesome team in this exciting role and be responsible for managing all food production within the Staff Canteen, and catered events throughout the Royal Botanic Gardens. As Chef Manager you will train and mentor the kitchen team always delivering excellence and innovation in food quality as well as food safety. The Ideal candidate will have proven experience in a similar environment, be customer facing, and have a passion for innovation, who is skilled in fresh food delivery and passionate about food.This is a rare opportunity to work in the exciting setting in the Royal Botanic Garden which participates in projects in more than 35 countries around the world. In 2020 it celebrated its scientific and horticultural achievements of the past 350 years, tracing progress from 17th century physic garden to world-leading botanic gardens.When you join Heritage Portfolio you truly belong, you will have the opportunity to thrive with career and learning opportunities available across the organisation – we can’t wait for you to join us!What you’ll do:To lead train and mentor the kitchen team to deliver excellence in food quality and develop our skill set on site.Control labour through rigorous management of costed rotas to stay within budget tolerances.Food ordering and stock controlFully plan and coordinate seasonal menus using elements of the Kitchen Garden throughout the dishes.Utilise local, seasonal produce from local suppliers.Ensure that all food safety and health and safety documentation is reviewed and in place.Support the development of onsite event menus for internal bookings.
